To Prepare, Wash an entire bag of Spinach and some Mushrooms (the whole bag of Spinach reduces down in cooking and may be just enough for 2 or 3 People) Cut some ham or chorizo into pieces if you want a meat dish (Peel and Chop some Garlic if desired) Grate some Cheese Heat Plates
Heat some olive oil in a large pot and put in the meat, mushrooms and garlic When they have started to brown, put in all of the Spinach and place the lid on Turn down the heat to about half Get some toast going and put the kettle on When the Spinach has reduced down in volume, the dish is done. Stir briefly to mix
Serve on heated plates and (optionally) add some Parmesan Cheese flakes or grated Cheese Enjoy with Salt & Pepper, hot buttered Toast and a big mug of steaming hot Tea
